Ingredients:

1 ½ cups of rolled oats make sure that they are certified gluten-free if you need to make gluten free sugar free granola.

2 tablespoons of flaxseeds

1 cup of unsweetened coconut flakes

1 tablespoon of cinnamon

½ cup of walnut pieces
-
½ cup of slivered almonds
-
2 ½ tablespoons of stevia (can be varied according to taste)

⅓ cup of almond butter
-
2 teaspoons of pure vanilla extract
-
½ cup of dried cranberries (may contain added sugar so leave out if in doubt)

½ teaspoon of salt.
Method:
Line a baking tray with greaseproof paper. Preheat oven to 180 degrees Celcius. Soak flaxseeds in the water and allow them to soak and thicken for five minutes. Then combine oats, nuts, coconut flakes, cinnamon, and salt in a large bowl. After waiting for a couple of minutes stir flaxseeds and water, then add in almond butter, stevia, and vanilla. Stir thoroughly until the mixture is smooth. Pour this wet mix into the bowl containing the oats. Stir until mixture is evenly combined and well coated. Spread the mixture out evenly over the baking tray. Place in oven for ten minutes then remove and stir. Return to oven and allow to bake for a further ten minutes. Remove from oven and allow to cool. Add dried fruit if desired
