Tigernut Flour Recipe - Chocolate Chip Cookie
Makes 12 cookies
Ingredients
- ⅓ cup of coconut sugar or cane sugar
- ¼ cup melted butter
- 2 tsp vanilla extract
- 1 egg
- 160 grams of tigernut flour
- ¼ tsp of sea salt
- ¼ cup of dark chocolate chips
- ¼ tsp of baking soda
Method

Use a medium sized bowl to whisk sugar, melted butter, vanilla extract and egg together.

Then add flour, sea salt and baking soda. Stir until combined. Then fold in the chocolate chips.

Place the mixture in the fridge for an hour and allow to cool.

Line a baking tray with greased paper and preheat oven to 180 C.

Remove the mixture from the fridge and scoop out 12 evenly sized dough balls and place the m on the baking tray.

Slightly flatten the balls and add a few more chocolate bits to the top of each cookie.

Place the baking tray in the oven and allow the cookies to bake for between 12 and 15 minutes.

Once removed from the oven, allow the cookies to cool on the tray for ten minutes before transferring them to a wire rack.

Allow to cool completely before eating.

The cookies can be stored for 2-4 days in a cool airtight container.
